Honey Guinness Leg of Lamb

So, you may have noticed the other day that I said I was going to start posting some of my favorite recipes.  Since this is not only my favorite to make but also Nick's favorite to eat, I thought I would start out with this one.

Honey Guinness Leg of Lamb
 
Ingredients 

1 boneless leg of lamb (I usually use a 2-3 pounder)  you can find this in most grocery stores (and in most commissaries for my fellow MilWives)
2 bottles of Guinness Draught
1 half of a honey bear (you know, the bottles of honey that are the shape of a bear?)  (approx 1.4 cup)
1 package of fresh thyme
 
Directions
 
Heat the oven to 350 degrees
Smash the thyme with a rolling pin, or the back of a knife (I use a mortar and pestle for this).  This will help bring out the flavor.

In a mixing bowl combine the Guinness, honey and thyme.  Whisk until the honey is mixed in well.

If you have a meat injector, inject some of the Guinness honey mixture in multiple places in the lamb leg (the injectors can be found in almost any grocery store, they are really inexpensive, and a GREAT kitchen tool)
 
Place the leg of lamb into a roasting pan.  Pour the Guinness honey mixture over the lamb.  Place in the oven.  Cook until the lamb has reached a internal temperature of 140.  (medium rare).  Turn once during the cooking.  Baste the lamb a few times on each side to make sure that it stays moist and gets the full flavor of the liquid.
Allow to rest for about 5 minutes.  Slice and serve.  

I usually serve it with fresh mashed potatoes and sauteed asparagus.

Who would have thought?

That I would LOVE being a SAHW?  But I do.  I love taking care Nick, and the house, and everything that comes along with it!  Don't get me wrong, I still want to contribute to the home, and the finances and all, and I'm working on it, with my photography.  But I'm really in love with being home.  I love cooking 3 meals a day ( on Nicks off days) for Nick.  I even look forward to getting up at 0530 every other morning to make breakfast, lunch, dinner and coffee for Nick before he leaves for work.  

Right now, the dishwasher is running, there is laundry in the washer AND dryer.  I plan on making some red velvet cupcakes at some point today or tomorrow (before the Christmas program at the Chapel) for Nick to take to work on Monday.  I also have peanut butter blossoms to make for some friends.  

Something else that is keeping me happy and content is the fact that I'm working so hard on my Avon and photography.  I have a couple shoots set up in the next few weeks, as well as a wedding to shoot in the spring.  I'm taking a class at the beginning of the year, to help me learn my camera better, and then another one in the spring to help me focus more on my shot composure.

A winner and a Happy Place!!

Ok, so first, the business part...I know that I'm late with this, but more on that later....Without further adieu...We have a winner for the Emily Roe Drawing!

Ok, and now, on to the Happy Place.  I'm sure that you've all noticed that things have been pretty quite here at Live, Laugh, Love for the last month or so.  Well, I can explain.  In the last 6 weeks, we closed on our house, I went to get my mom from NY, Nick left for 2.5 weeks of AF training, we had Thanksgiving (albeit the day after), Nick tore down our living room ceiling, and one wall, I took my mom back to NY, and now we're in the midst of our first drill weekend since we moved.  

I've learned alot in the last 6 weeks...some good, some sad...some, just stuff.  But I have to say, when it comes right down to it...I feel pretty good right about now.  Don't get me wrong, I miss the heck out of my mom...she's my best friend...but, it feels really good for Nick and I to be alone again finally...we're coming up on our 2nd anniversary, and this is the first time in almost that long that we've lived alone.  

I'm excited...I'm happy, I'm eager to cook and yes, (GASP) clean, and bake, and decorate, and do all the things that newlyweds in their first house should be doing.  I went to the commissary today, and got groceries, and was/am really excited about what I got, and how much I saved, and what I'm going to be doing in the kitchen the next few days.  

I guess I didn't realize how much I had missed this.  Being in our own space is amazing, and scary, and everything in between.  But I'm ok with that, and I'm having a blast.  I even really enjoy getting up at 0530 every other morning to make Nick coffee and lunch.  

So, yeah, that's where we are right now, and I'm loving every minute of it.  Especially every second that I get to spend with my amazing husband...
